There are a TON of challenges out there! Not every paper crafter participates in these, but I think it is a fun way to see other's creations, and it can help you try something new if a theme or concept required for the challenge interests you! Or if you need to make a card and have a creative block, pick a few go to challenges to spark your imagination! There are sketches, color themes, techniques, you name it! And in some, you can even win a prize! But note, for most, you have to keep up with the blog to see who wins to claim your prize or winner badge.
To find all the challenges, I suggest the Challenges for Days blog. It is a great resource that keeps up with most of the challenges out there! It is updated regularly by several volunteers by date, timeframe, or day.
